Where the Pumpkin Power Muffin is all about the nutrients, this personal-sized "muffin loaf" is all about the sweet tooth! Sometimes you just need to indulge, you know? But don't worry, the fresh pumpkin puree and duck eggs actually make this little gem more nutritious than your average chocolate chip muffin. (Remember, pumpkins are squash...and squash is a vegetable! So with every bite you're also doing your Mom proud by eating those veggies!) And while there are plenty of chocolate chips in in this recipe, I try not to use so many that they completely negate the nutritious pumpkin. Actually, now that I think about it, the chocolate chips are semi-sweet which means these muffins also have the beneficial elements of dark chocolate. Our son, Will, would eat them for every single meal if I let him. They're THAT good!
