As with everything I make, I couldn’t resist putting my own spin on a classic recipe when I created the BLUEBERRY HARVEST PIE. 😊 Rather than adding water for the filling, I created an “herbal tea” with Kudzu Blossoms, Lemon Basil, and Lime Basil so the flavor would be ENHANCED by the liquid, not watered down by it. Although lemon juice is traditionally used, I found a 50/50 split of lemon and lime to be MUCH tastier—-and because I hate the weird chemical-like flavor of bottled lemon/lime juices I used crystallized juice instead. But something was still missing. After much trial and error, that something was proven to be NUTMEG! ♥️ (NOTE: The amount of cornstarch needed for canned pie filling ends up having a detrimental impact on flavor and texture. To avoid that outcome, I decided to try reducing the cornstarch and incorporating some pectin to make up the difference. I can’t promise the filling won’t end up being a little too thin to make tidy slices of pie, but I CAN promise it tastes a whole lot better this way! 😂)
