PASTURED PORK: ONION SAUSAGE

(THIS MEAT WILL ARRIVE FROZEN SO PLEASE LEAVE A COOLER WITH ICE PACKS IF YOU WON'T BE HOME!)  Onion sausage from the pastured pigs of Sims Pond Farm in LaGrange, GA.  I'll admit, we'd never heard of "Onion Sausage" before, and it didn't sound too appealing.  (The strong onion smell when we first opened the package, and while it was cooking, would seem to justify our concerns.  HOWEVER, the final product is absolutely delicious!!  There's not much more than a hint of onion taste, and a perfect little kick of heat.  We had it alone in a sandwich, but it'd also be excellent in pasta!)
