Organically grown North Georgia Candy Roaster Squash from our own farm. This sweet, creamy squash is hard to come by because it's much more vulnerable to pests than most other winter squash varieties. (Which is the same reason we only ended up with four that survived the curing period after harvest.) They can be used instead of sweet potatoes and any other winter squash, holding up equally well to baking and frying. The skin is also thinner so they don't keep quite as long as butternut (for example), but are also easier to cut and peel. (The ones we're listing are fully cured which means they SHOULD still have a decent shelf life for you. It also means they've had time to convert more starches to sugar so they're ready to use when you are!) We're selling these by exact weight rather than size categories.
