This fruit spread was born out of an effort to make Nectarine Butter. As the fruit slowly roasted (which is reported to enhance the flavor more than simply cooking on the stove) the juices that began filling up the pan were absolutely delicious. It felt like a crime against fruit to simply cook those juice away! So I quickly changed course to turn those Nectarines into a jam worthy of their deliciousness! After roasting, the peel was tender and friable, so I chose to incorporate it into the pureed spread rather than lose those vitamins. Jams need sugar to preserve them, and even with the vastly reduced amounts of sugar I use I worried that the delicate flavor of the nectarines might be overshadowed by the sugar. To overcome this, I kicked the Nectarine's flavor up a notch by pairing it with a strong tea made with the delightfully sour berries of Wild Sumac plants. (FUN FACT: This Sumac Berry "tea" was once enjoyed by the Native Americans who first inhabited these hills.) I think you'll find the results are addictive! THEN, after all that, I noticed that the finished product is as thick and spreadable as a fruit butter, but as moist and flavorful as a jam. Not quite a butter, not quite a jam, I decided to call it a Fruit Spread. 😊
