Even though we’ve come to consider jelly to be nothing more than a tasty treat, it was traditionally one of the most common ways folks preserved the medicinal benefits of wild plants!  So when the stars FINALLY aligned for me to be able to gather enough Wild Rosehips to actually make something with them this year, I knew I wanted to try my hand a making a jelly that’s both delicious AND medicinal.  Then, in a lovely twist of fate, a tropical storm knocked down more Wild Persimmons than I’ve ever been able to gather before!  These two wild foods just happen to be a wonderful way to improve your overall health!  (If you scroll down past the ingredients list you’ll find an explanation of the benefits of each of the key ingredients in this jelly.)  

I won’t lie, though.  For a minute I was afraid the jelly would simply be too bitter to be palatable.  (Our wild rose hips tiny and therefore have less of the sweet fruit inside, but they have TONS of the bitter-tasting medicinal agents.)  I was about at my wits end when something told me I should try some of the crystallized orange juice I have left over from the Mandarin Peach Pie Filling.  I can’t fully explain why it worked, but HOLY FREAKING YUMMINESS, you guys! 😂  That stuff absolutely did the trick!  

INGREDIENTS:  Sugar; Ultra-Concentrated Tea Made With:  Water, Wild Rose Hips, Rose Petals, & Pineapple Sage Blossoms; Wild Persimmon Juice, Crystallized Orange Juice; Pectin; Sea Salt; Coconut Oil

 

ROSE HIPS:  

High in Vitamins C, A, B3, E, and D and also a good source of Iron, Rose Hips are just what the doctor ordered during cold & flu season or any times of stress.  They also have excellent anti inflammatory properties and their high flavonoid content makes them a potent antioxidant.

ROSE PETALS:  

Rose petals are a nervine, helping to soothe/calm the nervous system and ease tension and pain.  They are also antiviral, anti inflammatory, and antispasmodic (helping to relieve spasms in the respiratory system, intestinal tract, and muscles).

PINEAPPLE SAGE BLOSSOMS:

Pineapple Sage is traditionally chosen by herbalists for those who are an excellent herb for anyone feeling stressed out, anxious, mentally fatigued, and/or depressed.  And research shows that New flavanone, 5-O-(6-rhamnosylglucoside)-7-hydroxy-4′-methoxyflavanone (2), was extracted from the plant does, indeed, possess antidepressant properties!  The anthocyanins which give these blossoms their beautiful red color are also antioxidative and antimicrobial, and have been shown to  help boost neural and visual health and protect  against disease.

PERSIMMONS:

Persimmons are rich in both flavonoid and carotenoid antioxidants like beta-carotene.  Like Rose Hips, Persimmons are also nutrient powerhouses!  They’re an excellent source of Vitamins A, C, B6, E, & K as well as Potassium, Copper, and Manganese.
